Clearly the BEST way to get your fiber

Always up for a challenge, my boyfriend asked me for an Atkins Induction Phase friendly cake. Some might say impossible, I say, give me a diet and I'll make you a cake within it's rules and boundaries.

This turned out really well on the first try. I have to admit, I was a little surprised. The only trickiness you will find here is the time you need to microwave. It takes 4 minutes in my tiny microwave and 2 minutes, 30 seconds in my boyfriend's super duper microwave. So unfortunately you will have to figure out what time works best for the microwave you're using.

I should probably also warn you that this cake is really good. So good that you're going to want more. But don't forget that this is straight fiber, so unless you're prepared for the consequences, eat this cake in moderation (i.e., one a day)!

Guilt-less Chocolate Mug Cake

Ingredients

1 tbsp ground flax seed

1 tbsp psylium fiber

1 tbsp cocoa

4 tbsp splenda or sugar

1-2 tbsp shredded, unsweetened coconut

1/2 tsp baking powder

2 tbsp whisked egg

3 tbsp milk (or 2 tbsp almond milk, 1 tbsp cream)

3 tbsp olive oil

1/4 tsp vanilla

pinch of salt and cinnamon

Method

In a large mug, mix the first 6 ingredients together.

In a separate bowl, whisk one egg together. Unfortunately you won't need all of it.

Measure out 2 tbsp of egg into your mug on top of the dry ingredients. Add the rest of the wet ingredients and at the end throw in the pinch of salt and cinnamon. This is key as you want the salt to dissolve in the wet ingredients so that it incorporates completely.

Gently mix the wet ingredients together and then continue to mix the entire mug together quite vigorously to ensure you have a uniform cake mix.

Now just pop into your microwave for 2.30 to 4 minutes. You will see the cake rise up over the mug (some might spill over if your mug is small but don't don't worry) and then fall. This is normal.

When you take your mug out, give it a poke to see if it's done. The cake should no longer be touching the sides of the mug and when you poke it, it should bounce back at you. Let it rest a couple minutes as it is very hot.

Serve immediately alone or with some fresh orange zest flavoured whipped cream and smile. Because right now, you're winning!
